Yuzu carbonara w/ soy cured egg yolk

Soy Cured Egg Yolks
Step 2
Combine 1/2 cup soy sauce, 2 tbsp mirin, and piece of dried kombu.
Step 3
Separate yolks from whites and add yolks to marinade.
Step 4
Cover and refrigerate for at least 24 hours. Enjoy within 3 days.

Yuzu Carbonara
Step 6
Heat a large pot of water over high heat and add salt.
Step 7
Add pasta once the water starts to boil. Cook pasta for 2 minutes less than package directions.
Step 8
While pasta is cooking, chop bacon or guanciale into small pieces.
Step 9
Heat up a separate skillet or dutch oven over medium heat and add the pork.
Step 10
Cook pork until crispy. Then remove pork from the skillet and set aside.
Step 11
Drain cooked pasta but reserve about 1 cup of pasta water.
Step 12
In the skillet, add cooked pasta and 1/4 cup to 1/2 cup of pasta water. Stir for 1 minute.
Step 13
Add 1 tbsp yuzu juice. Continue stirring for another minute.
Step 14
Add cooked pork back to the skillet with the pasta.
Step 15
Add fresh ground pepper.
Step 16
Add parmesan or pecorino Romano over pasta and continue stirring. Save some for serving.
Step 17
Dish up pasta. Add a soy cured egg yolk. Sprinkle with more parmesan or pecorino Romano.
