Step 1
In a bowl, mix ground beef with yuzu kosho, salt, and MSG

Form into ~4 oz patties and let sit at room temperature

In a separate bowl, combine all yuzu vinegar ingredients and adjust to taste until bright and punchy
Step 4
Prep garnishes by grating daikon, shredding cabbage, and cooking rice
Step 5
Pan-sear patties over medium-high heat until a crust forms on both sides and cook to desired doneness
Step 6
Serve over rice with cabbage, grated daikon, a dollop of yuzu kosho, and spoon over yuzu vinegar
Step 7
Optional: add an egg yolk to the rice and mix before serving
