Yuzu Cinnamon Rolls

Soft, cozy cinnamon rolls swirled with buttery cinnamon sugar and finished with a creamy, fragrant yuzu glaze.

Ingredients

Dry ingredients

  • 1 tbsp yeast (active dry or instant)
  • ⅔ cups sugar
  • 2 tsp salt
  • 4 cups all purpose (500 g)

Wet ingredients

  • ½ C+ milk (warmish)
  • 2 eggs
  • 6 tbsp butter (room temp)
  • Heavy Cream (for later)

Brown sugar filling

  • ⅓ cup butter (melted)
  • ½ cup brown sugar
  • 1 egg yolk
  • ¼ tsp salt
  • 2 tbsp flour
  • ½ tbsp cinnamon

Yuzu cream cheese frosting

  • 8 oz cream cheese (softened)
  • 2 cup powdered sugar
  • ½ tsp salt
  • 2 tbsp YUZUCO 100% yuzu juice

Instructions

Step 1
For the brown sugar filling, whisk together butter, brown sugar, egg yolk, salt, flour, and cinnamon in an electric bowl until smooth. Set aside.
Step 2
For the yuzu cream cheese frosting, whisk together cream cheese, powdered sugar, salt, and yuzu juice in an electric bowl until smooth. Set aside in the refrigerator.
Step 3
Combine all the dry ingredients and mix together in an electric mixer for 30 seconds.
Step 4
Add the milk and eggs and mix for 10 minutes with a dough hook attachment.
Step 5
***The dough will look very wet, don’t worry it will come together.
Step 6
The higher hydration means a much more tender and moist cinnamon roll. (If the mixture is dry and crumbly, add in 1 tbsp milk at a time)
Step 7
Mix the butter 2 tbsp at a time (until fully incorporated), and mix for another 5-10 minutes.
Step 8
The dough is done when it looks smooth and pulls away from the side. It will be tacky but not sticky.
Step 9
TOTAL mix time will be around 15-20 minutes.

It should not be smooth, tacky but not sticky and pull away from the sides.
Step 11
Use a window pane test (it should be pretty elastic before it tears)
Step 12
Cover and bulk ferment at room temp for at least 1 hour.
Step 13
Press into a rectangular tray with parchment/cooking spray
Step 14
Chill in the fridge at least 2 hours, ideally overnight
Step 15
Will last up to 3 days (or freeze up to 3 months)

Roll out cold dough until ¼ inch thickness, and roughly 18x12 inch rectangle
Step 17
Spread the brown sugar filling to the edges with a spatula

Cut 1.5 inch strip with a pizza cutter and roll up individually

Alternatively, roll the whole thing up and cut with dental floss or a very sharp knife.
Step 20
Place into a greased casserole dish, 1 inch apart

Pour a thin layer of heavy cream in between then cover.
Step 22
Let proof until doubled in size (could take up to 2 hours)
Step 23
Preheat oven to 350 F
Step 24
Cook for 20-30 minutes
Step 25
Internal median temperature should be around 185 F
Step 26
Set aside for 10 to 15 minutes until slightly cooled and add yuzu cream cheese frosting.
