Ingredients
Serves 2-42 tbsp Yuzuco Yuzu Juice
2 tbsp rice vinegar (or mirin)
2 tbsp sesame oil (or olive oil)
1 tbsp honey (or maple syrup)
1 tsp grated ginger
Salt and pepper
4 cups grated carrots
1 orange (or mandarin)
2 tbsp chopped cilantro
1 tbsp toasted sesame seeds
1 tbsp pistachios

In a large bowl, whisk together the yuzu juice, rice vinegar, sesame oil, honey, grated ginger, salt, and pepper. Add the grated carrots and toss to coat them evenly.

Let the salad sit for 15-30 minutes to allow the flavors to meld together and the carrots to soften slightly. Meanwhile, cut the orange into supremes.

Garnish with orange supremes, fresh cilantro, pistachios and toasted sesame seeds.
