Ingredients

  • 1 bunch of carrots

  • 1 tbsp olive oil
  • 1/2 tbsp YUZUCO yuzu juice
  • 1/2 tbsp honey
  • 1/2 tsp mirin
  • 1/4 tsp ground ginger
  • 1/4–1/2 tsp salt
  • chopped carrot tops to garnish
  • flakey sea salt to garnish
  • olive oil to garnish

Instructions

Preheat oven to 350–375°F.

Peel and wash the carrots.

Add carrots to a baking sheet and set aside.

In a small mixing bowl, whisk together the olive oil, yuzu juice, mirin, ginger, and honey.

Pour the mixture over the carrots and sprinkle with salt.

Roast for 30–45 minutes depending on carrot size, until soft and caramelized.

Plate and finish with a drizzle of olive oil, chopped carrot tops, and flakey sea salt.
