Yuzu Honey Roasted Carrots

Sweet, citrusy, caramelized carrots roasted in a yuzu-honey glaze. A simple to make side with bright flavor and irresistible color.

Ingredients

  • 1 bunch of carrots
  • 1 tbsp olive oil
  • 1/2 tbsp 100% Yuzu Juice
  • 1/2 tbsp honey
  • 1/2 tsp mirin
  • 1/4 tsp ground ginger
  • 1/4–1/2 tsp salt
  • chopped carrot tops to garnish
  • flakey sea salt to garnish
  • olive oil to garnish

Instructions

Step 1
Preheat oven to 350–375°F.
Step 2
Peel and wash the carrots.
Step 3
Add carrots to a baking sheet and set aside.
Step 4
In a small mixing bowl, whisk together the olive oil, yuzu juice, mirin, ginger, and honey.
Step 5
Pour the mixture over the carrots and sprinkle with salt.
Step 6
Roast for 30–45 minutes depending on carrot size, until soft and caramelized.
Step 7
Plate and finish with a drizzle of olive oil, chopped carrot tops, and flakey sea salt.
