Matcha Yuzu Cream Top

Matcha yuzu cream top with a hint of honey. Inspired by Hokkaido milk ice cream and yuzu desserts on a hot summer day in Japan. Call it cream top, cold-foam, einspanner or whatever else 🐏🌻 By @emlyang

Ingredients

Matcha latte

  • 3g Matcha
  • 6g Sugar
  • 70g Hot water (~160F / 70C)
  • 1/2 cup of milk

Yuzu Honey Cream Top

  • 1 cup Heavy whipping cream
  • 1/2 tbsp Yuzu super juice
  • 12 g sugar
  • 1 tbsp honey
  • Dash of salt

Topping (Optional)

  • Camomile flowers
  • Crushed biscoff biscuit

Instructions

Step 1
Combine heavy cream, yuzu, sugar, honey, and salt in a cup or milk pitcher. Using a hand mixer, whisk the heavy whipping cream in an up-down motion until the consistency is a thick yogurt consistency. Heavy cream should double in size when done whisking.
Step 2
Set aside and refrigerate for 30 minutes.
Step 3
After 30 minutes, whisk the matcha powder and hot water at ~160F or 70C in a cup. Melt powdered sugar into tea, add ice cubes, and milk of your choice.
Step 4
Take out chilled cream and transfer to a piping bag. Pipe cream on top of latte.
Step 5
Decorate with camomile flowers.
